Raw Honeycomb

Last night I had the pleasure of meeting a local beekeeper at the St. Pete Indie Market. Danie LaCasse keeps several hives just a few miles from my home, truly making her honey an amazing medicinal choice for our community.

Not only does raw, local honey have anti-allergen properties (due to the pollen content from local flora) but also is full of antioxidants, phytonutrients, anti-inflammatory properties, and is immune-boosting, blood sugar stabilizing, anti-bacterial, anti-viral and anti-fungal. While raw honey contains these medicinal properties, pasteurized and processed honey does not.

I was intrigued by her selection of whole honeycombs- something I had never tried before. Danie assured me that the wax that forms the combs is completely edible, and will melt down if added to hot drinks or on top of hot foods. The wax is a form of roughage and actually contains B,C D and E Vitamins as well as amino acids and essential enzymes. Honey straight from the comb tastes bright, rich and vibrant, like a dose of pure sunshine!

Danie recommended her favorite ways to eat the whole honeycomb and I was happy to try her favorite this morning- pieces of honeycomb atop a bowl of Greek yogurt (unbelievably delectable, I may add). A few other recommendations for enjoying the whole comb:

CHARCUTERIE served with artisan cheeses and crackers. 

TOAST or English muffin, melted on top.

COFFEE OR TEA the waxy part melts into hot liquid.

YOGURT OR OATMEAL added on top or mixed in. 

SALADS fabulous crumbled atop in any salad, and pairs especially well with goat cheese.
